With mid terms right around the corner and the new year just starting, i want nothing more than to have the time (and energy) to make these damn good cookies. However, since i’m currently on page 87 of my test corrections and cannot see myself finishing in the near future, I share this recipe with you in hopes that you have the 10 minutes necessary in order to make these delicious and surprisingly easy coconut flour cookies.

What you’ll need is
-a bowl for holding the cookie dough goodness
-a wooden spoon to mix the cookie dough goodness
-measuring cups to measure the cookie dough goodness
-a pan to also hold the cookie dough goodness
– and an oven preheated to 350 degrees to transform the cookie dough goodness into actual baked cookie goodness.
Ingredients:
-3/4 cup coconut flour
-2/3 cup melted coconut oil
-4 TBS maple syrup
-vanilla or almond extract to taste
Directions;
1. Start by melting the 2/3 cup coconut oil in the microwave. I suggest just eyeballing an amount, scoop it into a microwave safe bowl and pop that sucker into the microwave for about 30 seconds. After melting it you can measure it more precisely and it will give you a more accurate measurement.
2. While the coconut oil is melting measure out 3/4 of a cup of coconut flour (which can now be found in most grocery stores)
3. Once the oil is melted and measured pour it over the flour and stir to combine. Then add the maple syrup followed by the flavoring of your choice. the dough should look like a paste.
4. On a parchment lined sheet pan scoop balls of the paste and flatten with either your fingers or a spoon so that they lay about a 1/8 of an inch high.
5. Bake the cookies at 350 degrees for about 8-10 minutes (or until golden brown and look done) let them cool (if you can wait) and enjoy
